Flourless Chocolate Coffee Cookies
For when you’re craving chocolate but don’t want to completely destroy your “diet.” They’re mostly paleo, thick, fluffy, and absolutely delicious.

Makes: 12 cookies
  • ½ cup coconut oil solid at room temperature
  • ¾ cup coconut sugar
  • 1 egg (can be room temperature, but no
    t necessary)
  • 1 teaspoon coffee extract
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup cacao powder
  • 1 cup semi-sweet chocolate chunks make sure they’re dairy-free or make your own (Optional)
  1. Preheat oven to 350ºF.
  2. Thoroughly mix together the coconut oil and coconut sugar until completely combined. Add the egg and coffee extract and stir until combined.
  3. Add in the baking soda, salt, and cacao powder and mix until smooth. If you’re choosing to add, stir in the chocolate chunks.
  4. Place dough in the freezer for 15 minutes. Use a cookie scoop to shape cookie dough balls and place on a baking sheet.
  5. Bake for about 10 minutes or until set around the edges (the edges shouldn’t darken much more than the rest of the cookie). Let cool for 10 minutes on the baking sheet before transferring to a cooling rack to cool completely.
  6. Eat in the morning because coffee and chocolate is the breakfast of champions, or at any point of the day or night because I’m not your mother.
